The flatbread is part of the meal, not a polite extra on the side. Lentils and squash leave good dressing on the plate, and warm bread is the quickest way to collect it. I heat the bread in the last five minutes so it is flexible rather than crisp.

Use shop-bought flatbreads, pitta or tortillas. If they are thick, brush them with a little water before warming; otherwise the edges dry while the middle is still cold.

Equipment

  • Large roasting tray
  • Medium saucepan
  • Foil

Method

  1. Roast the squash

Heat the oven to 220°C fan. Toss the squash with one tablespoon of oil, cumin and salt. Roast on a large tray for 30 to 35 minutes, turning after 20, until the pieces are tender and browned at the edges.

  2. Simmer the lentils

Put the lentils, onion, carrot and stock in a saucepan. Simmer uncovered for 22 to 25 minutes, until tender. Drain well and let the lentils stand in the warm pan while the squash finishes.

  3. Dress the lentils

Stir the lemon juice, zest, vinegar and remaining oil through the warm lentils. Taste for salt. The dressing should be lively because the bread will soften its sharpness in each bite. Check the lentils before you add more liquid: if they are already loose, use only the lemon zest and a teaspoon of juice. If they look dry, a tablespoon of hot water helps the oil and vinegar move through every grain without turning the platter soupy.

  4. Warm the bread

Wrap the flatbreads loosely in foil and put them in the oven for the last five minutes. If using pitta, warm it whole, then split it at the table. Keep the packet closed while you plate.

Do not let it dry out.

  5. Serve for scooping

Spoon the lentils onto a large platter and arrange the squash over them. Scatter over the parsley and bring the warm bread alongside. Serve with lemon wedges for anyone who wants more acid. Leave the tray juices visible around the lentils instead of wiping the platter clean; the bread is meant to catch them. If the lentils have cooled while you were warming the bread, return the platter to the switched-off oven for two minutes, but do not heat it long enough to dry the dressing.

Warm bread gently

Flatbread has a narrow window between flexible and brittle. Foil slows the heat and traps a little steam, which is useful for pitta and thicker breads. A dry oven rack is better for a tortilla that only needs to lose its fridge chill. Match the method to the bread instead of treating all flatbreads as the same thing.

The other trick is to keep the packet closed while the lentils are plated. Warm bread cools quickly once it is exposed, and cold bread tears when you try to scoop a heavy portion. If the bread has dried out, flick a few drops of water over it before wrapping. Do not soak it; wet bread becomes gummy rather than soft. This dinner is forgiving because the lentils can wait for five minutes, but the bread should be the last job.

That last-minute warmth matters more than the brand of bread. It also gives you a chance to check the lentils one more time: they should be glossy, loose enough to move around the platter, and sharp at the edges from the vinegar. If they have tightened while standing, stir in a tablespoon of hot water before serving. The water spreads the dressing without washing the flavour away, and the bread will collect whatever remains.

Questions

Can I use rice instead of flatbread?
Yes, but cook it separately. Rice changes the dish into a bowl meal; the lentil dressing is still enough to season it.
Can I use canned lentils?
Yes. Drain and rinse about 500 g canned lentils, warm them with the onion and carrot in a splash of stock, then dress with lemon.
How do I stop flatbread tearing?
Warm it gently and keep it wrapped. Cold, dry bread tears under the weight of squash; a little steam gives it the flexibility to fold.
