Fresh cucumber does not belong in the freezer. It thaws into watery ribbons and makes every other ingredient taste cold and tired. Tofu and rice are more useful: freeze them together, reheat them in a dry skillet and add the cucumber fresh at the end.
The tofu will not be as brittle as it was on the first night, but a hot skillet brings back a browned edge. The freezer is handling the base, not pretending to preserve the finished bowl. Label the container with the cucumber and vinegar you need to buy.
Ingredients
Freezer base
Fresh finish
Equipment
- Large non-stick skillet
- Freezer containers
- Tea towel
Method
-
Crisp the tofu
Press tofu in a tea towel for ten minutes, tear it and toss with cornstarch. Heat two tablespoons of oil in a wide skillet. Cook tofu in one layer for eight minutes, turning once. Add soy sauce, toss for 30 seconds and tip onto a plate. Let the pieces sit on a rack while you finish the rice. A plate holds the escaping steam against the lower crust, which is harmless when eating immediately but disappointing after freezing and reheating.
-
Warm the rice in the pan
Add the last tablespoon of oil and cooked rice to the skillet. Stir for three minutes, scraping up any tofu glaze. Let it cool completely. Warm food creates ice crystals and soggy grains in the freezer.
-
Pack the base
Divide rice and tofu between two shallow freezer containers. Leave the lids ajar until the steam is gone, then close and freeze. Label with the date and: add fresh cucumber, vinegar, sesame oil and spring onions. Keep the tofu pieces on top of the rice rather than pressing them into it. That makes thawing easier and leaves the browned sides exposed when you tip the portion into the reheating pan. A sheet of baking paper between layers stops them sticking together in a solid block.
-
Thaw slowly
Move a container to the fridge the night before. If liquid has collected, drain it. The slower thaw gives the rice a better texture and lets the tofu dry before reheating.
-
Reheat and finish
Reheat the base in a dry skillet over medium heat for eight to ten minutes, turning the tofu once. Mix cucumber with vinegar, sesame oil and spring onions. Spoon it over the hot rice and finish with sesame seeds.
Freeze a base, not a bowl
Cucumber contains a lot of water held in fragile cells. Freezing breaks those cells, and thawing releases the water as a soft puddle. The tofu and rice also soften a little, but their structure is strong enough to recover in a hot skillet. Keep the fresh ingredient out and the meal still has a reason to exist.
Cooling is part of cooking
Spread the rice and tofu out before packing. A sealed warm container traps steam, which condenses on the lid and freezes into a layer of ice. That ice melts into the rice later. Cool food, shallow boxes and a quick freeze make a visible difference.
