Tofu gets called bland by people who have not dried it properly. Water is the blandness. Press it out, give the tofu a hot pan and leave it alone long enough to form a crust, then it becomes something you can build dinner around.

The cucumber stays cold and the tofu stays hot. Lemon, parsley and mint connect them without asking either ingredient to become something else. Put it over rice and you have a dinner that takes less time than most sauces, provided you do not keep turning the tofu before it has browned.

Equipment

  • Large non-stick skillet
  • Clean tea towel
  • Small bowl

Method

  1. Dry the tofu

Wrap the tofu in a clean tea towel and press it under a heavy pan for ten minutes. Tear it rather than cutting it into neat cubes. The rough edges catch more cornstarch and make better crisp bits.

  2. Coat lightly

Put the tofu in a bowl, add the cornstarch and toss until every piece has a dusty coating. Do not add tamari yet; wet seasoning turns the starch into paste before it reaches the pan.

  3. Leave the crust alone

Heat the oil in a large skillet over medium-high heat. Add the tofu in one layer. Cook for four minutes before turning any piece. Turn and cook another four minutes, moving only the pieces that are already brown. Add the tamari at the end and toss for 30 seconds.

  4. Dress the cucumber

Mix the cucumber with lemon zest, half the juice, herbs and sesame oil. Taste it before adding salt; tamari will season the tofu, and the cucumber should stay clean and sharp.

  5. Bring the two temperatures together

Spoon rice into bowls and add the cucumber first. Put the hot tofu on top so the crust stays exposed. Finish with spring onions and the remaining lemon juice at the table.

Pressing is about the surface

You are not trying to squeeze every drop from tofu. Ten minutes under a pan is enough to remove the water sitting near the surface, which is the water that turns into steam in the skillet. Steam lifts the coating and leaves you with pale, rubbery pieces. A dry outside can brown before the middle has a chance to dry out.

Tearing creates uneven edges and small corners. Those are where the cornstarch catches, so they are worth more than perfectly square pieces.

Why cucumber goes underneath

Hot tofu on top of cucumber warms only the surface of the salad. Stir the tofu through too early and the cold cucumber releases water against the crust. Layering keeps the temperatures distinct and lets the sesame-lemon dressing collect at the bottom of the rice.

Questions

Can I use an air fryer?
Yes. Toss the coated tofu with one tablespoon of oil and air-fry at 200°C for 12 to 15 minutes, shaking once. Add tamari after cooking so the coating stays crisp.
Why is my tofu not crispy?
It was wet, crowded or moved too soon. Dry it well, use one layer and wait for a brown face before turning.
Can I make this without rice?
Yes. Serve it over noodles, quinoa or a handful of greens. The cucumber dressing is enough to moisten any of them.
Can I prepare the cucumber ahead?
Prepare it up to two hours ahead and refrigerate, but add the lemon juice shortly before eating so it stays crisp.
