Tahini is good with tomatoes when it is loosened properly. Straight from the jar it is thick and slightly bitter; whisked with lemon and cold water it becomes a pale sauce that can sit on the beans without flattening them.
Make the finish first; the final texture depends on it staying distinct.
The tahini needs to be made before the pan gets hot. It will seize when the lemon first hits it, so do not panic and add all the water at once. A tablespoon at a time gives you control over the final texture.
Ingredients
Tomato beans
Toast
Tahini swirl
Equipment
- Wide saucepan
- Small frying pan
- Toaster or grill
Method
-
Start the tomato base
Warm the olive oil in a wide saucepan over medium heat. Add the onion and a pinch of salt, then cook for six to eight minutes until soft and translucent. Stir in the garlic for one minute. Add the tomato paste and paprika and fry for 45 seconds, stirring constantly. It should darken slightly and smell sweet rather than raw.
Let the sauce settle before you taste and adjust the salt.
-
Simmer the beans
Add the chopped tomatoes, butter beans and stock. Bring to a steady simmer, then cook uncovered for 18 to 20 minutes, stirring every few minutes. The sauce should coat the beans and leave a slow trail when you drag the spoon across the pan. If it is still watery, give it another five minutes before seasoning.
Do not let the pan boil hard. Butter beans have thin skins, and a rough bubble breaks them against the base of the saucepan. A quiet simmer leaves some whole and lets the sauce thicken around them. Stir from the outside towards the middle, where the heat is strongest, and scrape the tomato paste off the bottom before it catches.
-
Toast the bread
While the beans simmer, toast the sourdough until the cut sides are deeply golden. Brush with olive oil while hot. Do not rush this part: pale bread goes soft as soon as the sauce touches it, while a proper crust stays crisp long enough for the first few bites.
The bread should crackle before the sauce touches it, then soften slowly.
-
Finish with the special topping
Whisk the tahini, lemon juice, garlic and salt in a bowl. It will tighten and look grainy. Add the cold water one tablespoon at a time, whisking until pale and pourable. Stop when it falls from a spoon in a narrow ribbon.
-
Serve while the textures are clear
Spoon the tomato beans into warm bowls or onto a wide platter. Add the toast at the side and finish with the prepared topping described above. Serve straight away. The sauce should be thick enough to hold a bean on the toast without running across the plate.
Why the lemon tahini swirl belongs at the end
The small amount of water is what makes tahini creamy. Oil alone makes it richer but does not loosen the sesame paste in the same way. Add water gradually because a sudden pour can leave a thin layer on top and a stiff lump underneath.
Do not simmer the tahini in the tomato sauce. Heat makes the sesame taste blunt and can leave the surface oily. Swirl it over each bowl once the beans have been plated, then drag the toast through both sauces.
